Spinach Squares

Spinach Squares

2 Tbsp. Margarine
½ cup Milk
2 Eggs
½ tsp. Baking Powder
½ tsp. Salt
1 (10 oz) box frozen Chopped Spinach (thawed)
1½ cups grated Cheddar Cheese
½ cup Flour

Preheat oven to 350°

Put Spinach in colander and press out all liquid. Melt margarine in baking dish in oven, swirl around to coat bottom. In bowl, mix well the eggs, salt, flour, milk, and baking powder until smooth. With spoon, stir in spinach and cheese. Top with cracker crumbs and bake about 40 minutes.

Let stand a few minutes before cutting into squares.

Note: I used an 8 X 8 glass square. It worked out OK but could have been a little smaller.

This recipe is good if you have a Crock pot or slow cooker!

Dump Soup

1 Small Bag of each of these Frozen vegetables:

  • Broccoli
  • Carrots
  • Green beans
  • Corn
1 Lg can Diced tomatoes
10 sm. red potatoes
1 lb. chicken baked or fried and cubed
3 chicken bullion cubes (diluted in cup of boiling water)

IN AM BEFORE WORK:
In Crockpot, set on low. Dump all ingredients (remembering to leave potatoes whole), fill with water till 2 inches from the top, season to taste! Go to work, come home, eat! If you aren't going to work, it takes about 8 hours on low and 4 on high! The beauty with this is you can put whatever your family likes in it . . . ground beef/more vegetables/less vegetables. It tastes great with a small round loaf of rye bread hollowed out and used as a bowl . . . use hollowed out pieces for "dunkin'" and eat the bowl when done . . . less dishes!

Spinach Feta Pie

Be sure to drain the spinach well before adding it to the eggs.

4 refrigerated biscuits
½ cup frozen spinach
1 Tbsp butter
½ tsp chopped garlic, or 1 clove garlic, chopped
5 large eggs, or egg beater equivalent
¼ tsp salt, optional ½ cup crumbled feta cheese

  1. Preheat oven to 375° degrees. With your hands or rolling pin, flatten each biscuit to a 7 inch circle. Place 2 inches apart on baking sheet. Place spinach in strainer in sink, run under hot water to defrost. Drain well; squeeze out any excess water with your hands.

  2. Melt butter in medium saucepan (nonstick) over medium heat. Add garlic; cook 1 minute, stirring. In small bowl, lightly beat eggs and salt; stir in well drained spinach. Add to skillet; cook 2 minutes, just until eggs begin to solidify, stirring constantly. Remove from heat; stir in cheese. Divide mixture evenly among biscuits, placing on lower half of each circle. Fold top half over filling; crimp edges with fork to seal. Bake 12 minutes, until puffed and golden brown.
