Beef and Bean Salad
1 lb of ground beef
2 garlic cloves, pressed
1 1/3 FRENCH'S French Fried Onions, divided
2 (16 ounce) cans black beans, rinsed and drained
1 (10 ounce) can diced tomatoes with green chiles, undrained
1 tablespoon chili powder
6 cups shredded lettuce
1 cup (4 ounces) shredded sharp cheddar cheese
TOPPINGS: corn chips, sour cream
Cook ground beef and garlic in a large skillet over medium-high heat, stirring until meat crumbles; Drain.
Stir in 2/3 cup French Fried Onions and next 3 ingredients. Cook over medium heat 10 minutes or until hot. Spoon over lettuce, and sprinkle with cheese.
Serve with desired toppings.
**I put mine in a pita shell instead of the lettuce, and it was yummy!**
